Homemade Granola

I started with the 30 Day Gourmet Recipe, then adjusted it because I wanted it  “chunky”, not to be so fine.  Here is the way I make it:
 
To make 12 cups
2 cups Whole Wheat Flour (I mill my own and use Hard White Wheat), if you purchase it, try an all purpose flou like King Arthur Unbleached Whole Wheat Flour
 
6 Cups of Rolled Oats.  I roll my own, and they are great, or get something like a big canister of Quaker.
 
1 cup Wheat Germ - (This comes in a jar)
1 teaspoon baking powder
1/2 cup Water
1 cup Olive Oil
1 egg
1/2 cup honey
1/2 cup brown sugar
2 teaspoons Vanilla
2 teaspoons Sea Salt (regular salt will be fine if you do not use sea salt.)
 
Optional:
1/2 cup flax seed, ground in the blender
1/2 chopped pecans or walnuts
Once cool, you can add dried fruit like raisins or dried cranberries
 
Spread in a layer on a sprayed baking pan, usually this requires two pans.
Bake at 250 for one hour, stirring every 20 minutes.
