Homemade “Egg-English Muffin” Sandwiches and Egg Salad Sandwiches

We are on week two of the “Back to Basics Cooking Class” with Shelley.

Today, the girls made YUMMY homemade Egg-English Muffin Sandwiches.  Let me just confess something right here.  I love these from McDonalds.  I love the yummy, warm, cheesy egg goodness.   I always thought they looked easy to make, but I wondered how to get the egg to look so perfectly round.  Well, the mystery is solved forever in our household, and now the girls can make these with ease.  The only tricky part was getting the egg out of the hot ramekin.  I was scared they would burn themselves, so I did that part.  My oven mitts are kind of thick and not too easy to maneuver.

These were easy, YUMMY, and very cost effective.  Much cheaper than the drive-through kind, and just as delicious.  These were made even better because the girls were so proud to serve them.

Another thing the girls learned this week was making egg salad. She started with a really easy way to peel hard boiled eggs that made peeling a snap. Then the girls added all the ingredients and made some very yummy egg salad. I was too full from my Egg-English Muffin sampling to eat a whole sandwich, but this will refrigerate nicely and be perfect for a breakfast sandwich.
