Leftover Turkey

Around Thanksgiving or Christmas you can get turkey at a great price,  so even if you do not have leftover turkey, you may want to buy extra for freezer or bulk cooking later.  Here in Louisville, I have found it for 69 cents, and have heard of prices as low as 39 cents in other towns.  Here are some of the ways you can use up leftover turkey:

Kentucky Hot Brown

Turkey Noodle Soup

Mexi-turkey (see the mexi-chicken recipe on my website) - Freezes well

Turkey Pot Pie- Freezes well

Turkey Salad (Like chicken Salad)

Save the bones, broth, and some leftover meat for soup base.  You can put it in a freezer baggy and save to use later.

Turkey/Veggie Soup

Turkey Cranberry Wreath

Some other foods that are generally great buys this time of year include:  Butter, pie crusts, stuffing mix, cornbread mix, cranberry sauce, frozen pies, and nuts.  you can stock up on these now, and freeze them for year round use.
